Olive Oils & Herbs

At Cooking Vacations, we make extra virgin, first cold-pressed olive oil from precious olives that have been tenderly cared for by our farmer, Signor Salvatore.  We have over 600 trees – each tree is over one-hundred-years-old  – that produce beautiful organic olives.  At harvest time, we pick the olives by hand, then immediately press them on cold stones.  The oil is bottled in glass bottles and tin cans in limited quantity.

Virgin means the oil was extracted from the very first pressing, cold-pressed means no heat was used, and DOP (Denominazione di Origine Protetta) means it has an ‘origin protected’ domain of production. Our olive oil is made in Italy with an official stamp of approval.  Our trees are grown with care, the soil is kept pure keeping a low level of oleic acid which give the olives more natural vitamins and minerals.  

When served, our olive oil offers a scent of almond and artichoke – due to the two nearby orchards that add to the cross-pollination, is a beautiful emerald green color, and has a thick consistency.  In addition to our extra virgin oil, we also produce lemon, chili pepper, and rosemary-infused extra virgin, first-cold-pressed olive oils.  Our infused olive oils add hints of a true Mediterranean flavor to any recipe.

Grown under the warm Mediterranean sun, in rich volcanic soil, and with salty sea winds, high-quality olive oil is a must in Italian cooking. 

 
Extra Virgin First Cold Pressed

Our extra virgin first cold-pressed olive oil has a green hue and fruity taste with hints of fresh-cut grass, green apple, and almond. Extra oil olive oil and adds a fresh touch to antipasto, pasta, risotto, fish, meat, and cheese.  Extra virgin first cold-pressed olive oil is the key ingredient in all Mediterranean-style cooking.

Lemon Olive Oil

Sfusato, the varitey of precious Amalfi Coast lemons, are gently pressed with the olives to create our unique lemon-infused olive oil. The olive oil has a delicate hint of lemon and adds a fresh touch to summer salads, lemon pasta, risotto, grilled fish, meats, and cheese; we also use it in baking.

Rosemary Olive Oil

Rosmarino olive oil is grown on the Amalfi Coast and adds a Mediterranean flavour to focaccia, fish, meat, and roasted potatoes.

Olio al pepperoncino, is infused with red chili peppers, has a peppery flavor, and adds a Neapolitan style to pasta, pizza, meat and fish.

Oregano

Our Italian oregano is a key ingredient in many Mediterranean recipes. Sprinkled on focaccia, dusted on bruschetta, added to tomato sauce, or garnished on pizza and meats, oregano is an Italian herb that adds a delicious flavor to any recipe. Its name, oregano, is derived from the Greek word origanon, literally translating to mountain of joy.
