The family uses only the freshest milk, and then works it into a creamy cheese, weaving it into braids and twists. Using a wood-burning pizza oven, he teaches his technique for rolling the dough into a perfect round pizza, cooking it at the ideal temperature, and turning the pizza just the right way. Learning to make pizza in Italy is an art, and our Pizzaiolo shows you just what it takes to create the perfect pizza.
You will learn how to measure and mix the ingredients into a perfect pizza dough; see how it rises, “punch” it, let it rise again, roll it, and “drive” it. Following the prep, you will see how to wood-oven bake it to perfection!

Kiwi, lemon, watermelon, chocolate, Baci, hazelnut, chestnut and more are just a sampling of the flavors. Bake and make local regional desserts including Capri Cake, Lemon Tiramisu, or the famous chocolate eggplant lasagna. Give your sweet tooth a treat in this workshop where you will be making local desserts and natural gelato & sorbetto by the mounds. Join us for an early morning departure through the back roads of the Sorrento & Positano hills, along the Amalfi Coast for a food trip that visits bread, cheese & wine artisans. Our Food Trip brings us first to “Signora’s” artisan bread shop. Here, you will see endless loaves of wood-burning, brick- oven-baked bread, sugar biscotti, pizza & focaccia on the shelves. Take out your note pad as we learn about the different kinds of breads with Signora. Next stop, we visit an artisan cheese maker. Here we visit with artisans who braid and shape the soft cheese mixture. Give your hand a try then taste the delicate hand-made cheeses from Mozzarella, smoked Provolone & Pecorino. Next stop is Signore Giuseppe’s cantina, where we tour his production of assorted wines, including Aglianico, Falanghina, and others. Tastings included.
