The Iaccarino family welcomes you to Don Alfonso 1890, the award-winning Michelin Star Restaurant for hands-on cooking classes for food lovers of all levels. The property is located in the quaint town of Sant'Agata sui Due Golfi nestled between the Bays of Naples and Salerno. Whether you are staying in Sorrento, Positano, Amalfi, Ravello, or other towns along the Amalfi Coast, you may spend a morning (or more!) in Sant’Agata to immerse yourself in Mediterranean cooking. The Executive Chef, with his 40 plus staff, prepares Mediterranean cuisine in their professional kitchen which is dedicated exclusively for cooking class participants.

Each One Day Class focuses on a different subject including fish, meat, seasonal vegetables, fresh pasta and desserts, so choose your favorites and pick from one or more daily classes.

The Wine Cellar

Step into Don Alfonso 1890’s Cellar and go back in time. The cellar, originally an ancient Roman tunnel stocks over 25,000 bottles of wines from all over the world, ranging from the Italian Greats, to prized French to exotic world makers. The cellar also has a cheese aging room that is 25 meters underground; keeping their prized artisan cheeses at just the right temperature.

Wednesday

Seasonal Vegetables: demonstration of 2/3 recipes using the fresh seasonal ingredients from the garden. Learn about eating what’s in season for the best taste and nutrients. Tasting lunch follows on the foods prepared in class.
Cooking class starts at 9:30am and ends at about 1pm.

Thursday

Seafood: the most important species of the Mediterranean Sea and them main features.
Clean, thread and cooking methods (traditional cooking “Acqua Pazza”, modern cold cooking). Preparation and tasting of 2/3 recipes at the end of the lesson.
Cooking class starts at 9:30am and ends at about 1pm.

Friday

Fresh Pasta: learn to make fresh pasta with eggs and flour, fresh pasta with water and semolina. Focus on the pasta-making process: kneading and laying. Pasta making is an art in Italy and learn about the many different kinds that vary by region, season and more.
Preparation and tasting of 2/3 recipes.
Cooking class starts at 11:30am and ends at about 3pm.

Saturday

Meats: the most interesting varieties and the main cuts. Learn about cooking methods, preparation and tasting of 2/3 recipes.
Cooking class starts at 9:30am and ends at about 1pm.

Sunday

Dolci: the great Neapolitan art of pastry making. All over Italy desserts reign, and the area around Naples boasts a rich tradition such as the incredible sfogliatella, torta caprese, delizia a limone from the Amalfi Coast, not to mention the many desserts tied to holidays and saint days (Zeppole di San Giuseppe, for one). At the end of the lesson, tasting follows of the desserts made in class.
Cooking class starts at 9:30am and ends at about 1pm.

Program Prices

One cooking class is $525 per person.
2 cooking classes: $925 per person.
3 cooking classes: $1,295 per person.
4 cooking classes: $1,695 per person.
5 cooking classes: $2,050 per person.

Includes all taxes and Italian VAT.

2010 & 2011 Dates: This program is available March 18 to November 2, 2010. Cooking classes are held Wednesday to Sunday each week. Rates are subject to change based on currency exchange. Call for updated rates. Airfare not included.
