Join us for a one day hands-on cooking class in the magical Medieval City of Bologna in the kitchen of Chef Antonella- under arches and across piazzas to discover a city that is rich in food, history, and elegant in all senses.
Bologna One Day Cooking Class
Chef Antonella is a sfoglina, the Bolognese term for a woman who make pasta by hand in the traditional way with an old-fashioned rolling pin and wooden tools. Antonella has her great grandmother’s bamboo pasta making board and pin for making her pasta and shares her art with you! Start by preparing the ‘OO Farina,’ the finely ground white flour, knead the dough by hand and allow it to rest, then roll out the sfoglia and fold, twist and create the small delicate pastas that Bologna is so famous for. Under the guidance of our professional Chef, you will learn the technique for mixing, kneading, rolling and creating perfect tortellini & tortelloni, tagliatelle lasagne and gnocchi, with delicious stuffings and sauces such as burro e salvia, butter and sage, Bolognese, meat sauce, pomodoro, traditional tomato sauce, and more.
Choose Pasta Making, Bologna Traditional or Seasonal Fish, Meat or Vegetarian Menus. Lunch or dinner always follows on the foods prepared in class, with a toast of local wine.

Saturday Market Tour & Cooking Class In Bologna
The one-day cooking class combines an early morning market visit followed by a hands-on cooking class. Every Saturday morning in Bologna, Slow Food artisans gather in the piazza to showcase their seasonal and strictly local, called zero-kilometer, products that arrive directly from the farmer to the consumer. Fruits and vegetables, breads, milk, yogurt, eggs and fresh pasta – all guaranteed by the weathered faces of the contadini, farmers, that grow, harvest and make them. Stroll the market and learn about the freshest fruits and vegetables in season, which vendor carries the best cuts of beef, wonderfully smoked Prosciutto, and when the artisan cheese is at its perfect age. Half-hour visit to the market, discussions & tastings included.
Then head to the kitchen to get cooking! Alongside the Chef Antonella in her cooking class dedicated kitchen, prepare a full menu from antipasto to dessert, based on the season or choose Pasta Making, Vegetarian and other specialty menus. After class, enjoy the fruits of your labor for lunch or dinner. Toast with a glass of local wine, included.

Learn and explore the Medieval Market of Bologna and discover our favorite addresses of food, wine, culture and history in the centro storico. To get acquainted with this beautiful city, you will have an unforgettable food tour to artisan producers and purveyors to see and taste Parmigiano Reggiano cheese, Balsamic Vinegar, pasta & tortellini, tartufi, truffles, chocolate, wine and café! The centro storico is lined with specialty food shops that carry on with 4th and 5th generations of families still producing their slow foods just as their forefathers did. From via Caprerie to via Clavature, the small ancient streets of the 1880’s seem to form one perfect banquet hall. Discussions & tastings follow.
