Tie on your apron with Chef Salvatore for a hands-on cooking class on the beautiful island of Capri. He welcomes each guest to his Mediterranean kitchen and prepares full course fare using in-season ingredients from his garden. In our Capri cooking class you will prepare zucchini flowers stuffed with ricotta, hand made ravioli and gnocchi, local fish, seasonal vegetables, and desserts such as chocolate Caprese!
Meet Chef Salvatore in his Mediterranean kitchen for your hands-on cooking class. He will lead you through Neapolitan tradition recipes with menus that change with the seasons. Tie on your apron and roll out ravioli capresi, prepare pesce al limone, torta caprese, and limoncello in an authentic hands-on experience. Special menu requests like gluten free or vegetarian are available.
Chef Salvatore begins each day with a visit to his garden where he picks fresh fruits and vegetables. Signor Paolo, the local fisherman, delivers his treasures from the sea each day to the kitchen, and Domenico, brother to the Chef, produces naturally raised meats on the family’s farm. Chef Salvatore prepares and bakes his own breads and desserts daily with delights such as the delizia lione, torta and limone Caprese.
The Capri cooking class features traditional cooking with a twist of Chef Salvatore’s interpretation. After starting his career on Capri with his father who was also a chef, he gained international experience working with award-winning Michelin-star chefs, then returned to Capri. His technique and approach to using farm-to-table ingredients are unsurpassed. The result is beautiful Capri food and high end wine from the family’s cellar to make every cooking class a one-of-a-kind experience!
In each cooking class you will prepare an antipasto, fresh pasta with seasonal sauces or ravioli or risotto, a main course and dessert. Following the cooking class, everyone enjoys the foods that were prepared in class at the family table with wine included.
“I don’t measure, I use my eyes, except in dessert making where precision is important,” he tells in a Neapolitan dialect. At sunrise he is out in the garden picking fresh mint, rosemary and giant yellow zucchini flowers. His Mediterranean garden is flowering with spring peas to poppies, summer roses and lavender, zucchini and eggplant, black cherries, oranges and lemons. “What’s in our garden is on our table,” he explains.
The hands-on cooking class begins at 10am or 4pm.
