Ciambelle al Vino – Nonna Philomena’s Wine Biscuits
Ciambelle al Vino, wine biscuits, emerged in the Castelli Romani hill towns outside Rome and in Campania. A region known for its wine, these biscuits are beloved by many and contain just a few easy ingredients. They come from the tradition of cucina povera, a poor man’s cuisine. Born out of simplicity and resourcefulness, they require only a handful of humble ingredients that are pantry staples in any Italian kitchen. Often served with a glass of wine, these crunchy, subtly cookies are perfect for dipping in an expresso, cappucino too. Simple to make and loved by all, wine biscuits are a classic!!!

Preheat oven to 350º F.

Line the baking pans with parchment paper and spray with canola oil.

In a mixing bowl, add the wine, sugar, oil and baking powder and mix well.

Next, add the flour slowly until the dough is smooth and workable. Roll the dough into logs about 5 inches long and as wide as desired.

Roll in a twist or like a coil, then place each biscotti on the baking pan about 2 inches apart. Brush the top of each biscotti with the beaten egg.

Bake for 25 to 30 minutes (depending on your oven), rotating pans, until golden brown. Remove from the oven and let cool. Serve with coffee, tea or wine.
