Originating in the heart of Emilia Romagna's Bologna, biscotti al Parmigiano are a savory twist on the traditional sweet biscotti.  The protagonist in this recipe is the Parmigiano Reggiano cheese which adds salty flavor and particular texture to the mix. These delicate biscotti al Parmigiano are the perfect for an aperitivo or pair well with a glass of white or red wine.

Ingredients
  • 100 grams butter
  • 130 grams wheat flour 00
  • Salt (as needed)
  • Pepper (as needed)
  • Parmesan cheese (as needed, grated)
Preparation
  1. Chop finely grated Parmesan, and mix it with the softened butter, flour, salt and pepper.

  2. Create a homogeneous mixture; form a ball and wrap it in plastic.

  3. Leave to rest and pack all the ingredients for about 1⁄2 hour in the refrigerator.

  4. Roll out the dough and make the desired shapes.

  5. Bake in preheated oven for about 8 minutes.
