  1. Mix the flour, butter, sugar, and solid egg yolks, then roll out the puff pastry to a thickness of one centimeter.

  2. With a special mold, which has a center hole to give a precise shape, form the canestrelli and then place them in a pan that you will leave to rest in the refrigerator for about half an hour.

  3. Bake them in a preheated oven at 375 °F until golden brown, for about 20 minutes until golden brown.

  4. Remove, let the canestrelli cool and then sprinkle them with Confectioners’ sugar.
