Place all the ingredients in a bowl and knead for 4/5 minutes. Take the dough and shape it into a ball; wrap it in baking paper and place it in the refrigerator for 20 minutes. Using a little flour, pass the dough through the pasta machine or roll it out as much as possible with a rolling pin until it is very thin, a millimeter at most. Cut crackers using a pastry cutter and place them on the baking tray; brush them with oil and distribute the chopped pistachios on their surface.
Bake in a preheated oven at 200°C for 15/20 minutes; if you wish, add a little salt at the end of cooking. Tasty and crunchy!
