You can choose from a delicious market tour with tastings followed by a hands-on cooking class or a traditional cooking class followed by a delicious meal featuring the foods prepared in the cooking class. Learn about Ligurian cuisine and spices while cooking and sipping Vermentino and Dolceacqua wine – the local wine of the region. There is no better way to cook and learn than with a local, and this Italian Mamma knows how to make you feel right at home!
Pasta & Pesto Cooking Class
You will learn to roll out fresh troffie, little hand-rolled fresh pasta twists served with creamy pesto using farm-to-table basil, flour, eggs and Parmigiano Reggiano. Learn how to mix, knead and roll out perfect pansoti, Italian Riviera ravioli and gnocchi prepared with delicious cheese, vegetables and herb fillings with sauces such as burro e salvia, butter and sage, walnut sauce and Ligurian pesto made with basil! And for dessert, you will learn how to make Biancomangiare, Italian cream pudding, amaretti and cubeli biscotti to name a few.
Program Includes:
- Hands-on cooking class including the preparation of local traditional pasta with sauces and dessert.
- Lunch follows and everyone enjoys the food that was prepared during class with local wine included.

Traditional Cooking Class
Get ready to participate in hands-on cooking preparing a full-course Ligurian cooking class. Learn about the local cuisine while slicing, dicing, cooking and baking in Chef Chetta’s private home kitchen. The cooking class is 4 to 5 hours. Lunch follows and includes the food that was prepared in class with wine included.

- Hands-on cooking class including the preparation of a full-course traditional lunch featuring a full course lunch or dinner.
- Lunch or dinner follows and everyone enjoys the food that was prepared during class with local wine included.

Market Tour & Farm-to-Table Cooking Class
Meet Chef Chetta in the marketplace in Genova for a full immersion into the food, wine, spices and history. Start your tour with a caffè and taste some local sweet treats while planning your seasonal menu. Next, shop like a local with Chef Chetta, selecting the best in-season vegetables, artisan breads, and the freshest local meat or fish. Return to her kitchen with your fresh ingredients for a hands-on cooking class, which may include traditional dishes such as farinata, a chickpea tart, handmade pasta such as corzetti, a main course such as tomaxelle, meat roll, and for dessert, a Genoa cake called pandolce, filled with sweet raisins and pine nuts. Lunch follows on the foods prepared in class with wine included.
