Bread, like all food in Italy, changes with the region. Join our professional Pastry Chef, Filo, who will teach you the fine art of making Sfogliatelle. This speciality baking class will show you technique, method and steps of preparing the delicious Sfogliatella Santa Rosa. Using high quality farm-fresh local ingredients, mix, knead and roll the dough that will transform into delicate and the crispy shell-shaped pastry filled with cooked cream and orange zest.
This delicate and delicious pastry, which is well-known and available in pastry shops along the Amalfi Coast, originated in the Monastery of Santa Rosa in the early 1700s. The pastries were first made by the nuns, the pastry is so delicious that their popularity soared turning them into the most popular traditional Neapolitan dessert. Get peeling and watch the famous lemon liqueur come alive before your eyes. As the lemons bathe in the mix, learn about the many different ways you can use limoncello in cooking. Following the preparation of the limoncello and lemon and or limoncello desserts, everyone enjoys the limoncello and desserts that were made in the cooking class. Traditional Caprese Cooking Class~1 Day
Join Chef Salvatore, along with Signore Lucia and Anna in our Cooking On Capri tour. Chef Salvatore leads in hands-on cooking in his Mediterranean kitchen creating healthy cuisine prepared with seasonal products and garden fresh produce. Tradition is key in the kitchen as you will prepare such favorites as zucchini flowers stuffed with ricotta, hand made ravioli, grilled fish and chocolate Caprese!
Chef Salvatore’s Mediterranean kitchen is host to your hands-on cooking class, located at his family property on beautiful Capri. He will lead you through Neapolitan traditions with menus that change with the seasons. Tie on your apron and roll out ravioli capresi, prepare pesce al limone, torta caprese, and limoncello in an authentic hands-on experience featuring the cuisine of Capri. Special menu requests such as gluten free or vegetarian are available.
Salvatore starts out each day with a visit to his garden where he picks fresh fruits and vegetables. Signor Paolo the local fisherman brings his treasures from the sea each day, frattello Domenico produces naturally raised meats on the family’s farm, while the oven is hot baking island favorite desserts like delizia, torta and limone Caprese.
In each cooking class you will prepare an antipasto, pasta or ravioli or risotto, main course and dessert. Following the cooking class, everyone enjoys the foods that were prepared in class at the family table. Toast with a glass of wine, and end with a sweet Capri dessert!
“I don’t measure, I use my eyes, except in dessert making where precision is important,” he tells in a Neapolitan dialect. At sunrise he is out in the garden picking fresh mint, rosemary and giant yellow zucchini flowers. His Mediterranean garden is flowering with spring peas to poppies, summer roses and lavender, zucchini and eggplant, black cherries, oranges and lemons. “What’s in our garden is on our table,” he explains.
The hands-on Cooking Class begins at 10am or 4pm upon request. Lunch or dinner follows and includes the food that was made in the cooking class. Wine and recipe book included.

Pizza-Making Class with Our Family in Capri
Mix, Knead, & Bake The Perfect Neapolitan Pizza
Tie on your apron for a hands-on pizza making class on Capri where you will make authentic Neapolitan pizza, fried and baked, along with an antipasto and dessert. Our pizziola will show you how to mix the dough and roll it into the perfect pie for baking and flash-frying.
You will learn how to measure and mix the ingredients into a perfect pizza dough, watch it rise, then “punch and drive the dough”. You will also create a delicious antipasto and dessert. After the cooking class, everyone enjoys the antipasto, pizza and dessert prepared in class. Toast with a great glass of Aglianico, red, or Falanghina, white, wine, soft drinks for the children, and end with a sweet dessert. These recipes can easily be recreated at home. Each guest receives a Chef’s shopping bag, apron and recipe book.
Wine Tasting Add On Option – Add on a wine tasting with your pizza class and learn about 3 exclusive wines of the area and how they pair with pizza! Additional price vary once you select the wine with our sommelier, based on 2 guests.
